I know that we technically have a little over a week left of “official” summer…but this morning it was 36 degrees, so I think it’s safe to say that fall has made it’s debut up north. And though I’m a summer girl through and through, I can’t help but excitedly welcome fall each year. The brightly colored leaves, crisp morning air, lively football games under lights and abundance of pumpkin spice lattes are all only just the beginning of my obsession with this season.
With a chill in the air and change on the horizon, I figured today was the day to pull out my trusty old, pumpkin chocolate chip cookie recipe. I never bake much during other parts of the year, but as soon as fall hits; my kitchen-aid is usually working overtime and these cookies are usually the culprit. A Cristy family favorite; I was even able to get my self-proclaimed, pumpkin hating father-in-law to fall in love with these tasty treats a few years ago. Yep, they’re that good.
So, without further ado…I give you your new favorite cookie recipe. Try to eat just one, I dare you.
Pumpkin Chocolate Chip Cookies
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon pumpkin spice
3/4 cup sugar
3/4 cup brown sugar
1/2 cup butter, softened
1 egg, beaten
1 teaspoon vanilla
1/2 cup canned pumpkin
1 cup chocolate chips
In a medium bowl, combine first four ingredients; set aside. In a large bowl, cream sugars and butter. Add egg, vanilla and pumpkin; beat well. Gradually mix in flour mixture on low speed of mixer. Stir in LOTS of chocolate chips.
Drop by tablespoonfuls onto ungreased cookie sheets. Bake at 350 degrees for 10-12 minutes or until edges are golden brown. Cool on wire racks & try to not eat them ALL in one day.
